Ingredients
For the grilled chicken
- Chicken breast 500 Grams
- Olive oil 1 tablespoon
- Salt 1 teaspoon
- Black pepper 1 teaspoon
- Garlic powder 1/2 teaspoon
- Onion powder ½ teaspoon
- Paprika ½ teaspoon
- Oregano ½ teaspoon
For the Panini:
- Cherry tomatoes
- Olive oil 1 tablespoon
- Salt as required
- Black pepper as required
- Ciabatta rolls 4 pieces
- Basil Pesto
- President Cheddar Cheese
How to prepare
- Begin by cutting the tomatoes in half and arranging them in a baking dish.
- Drizzle the tomatoes with oil and sprinkle them with salt and pepper.
- Toss the tomatoes to ensure an even coating of oil, salt, and pepper.
- Roast the tomatoes in the oven for approximately 15 to 20 minutes or until they become soft and slightly charred.
- Once roasted, remove the tomatoes from the oven and allow them to cool down.
- Next, prepare the seasoning by thoroughly mixing all the spices with the oil.
- Place the chicken in a bowl and ensure it is evenly coated with the seasoned oil.
- Grill the chicken for about 4 to 5 minutes on the first side.
- Flip the chicken over and continue grilling for an additional 2 to 3 minutes or until it is thoroughly cooked.
Transfer the grilled chicken to a plate and set it aside. - To assemble the sandwiches:
- a. Split the ciabatta rolls.
- b. Spread pesto on one half of each roll.
- c. Top the pesto-covered half with the previously cooked tomatoes, grilled chicken, and slices of President cheese.
