Ingredients

For the grilled chicken

  • Chicken breast 500 Grams
  • Olive oil 1 tablespoon
  • Salt 1 teaspoon
  • Black pepper 1 teaspoon
  • Garlic powder 1/2 teaspoon
  • Onion powder ½ teaspoon
  • Paprika ½ teaspoon
  • Oregano ½ teaspoon

For the Panini:

  • Cherry tomatoes
  • Olive oil 1 tablespoon
  • Salt as required
  • Black pepper as required
  • Ciabatta rolls 4 pieces
  • Basil Pesto
  • President Cheddar Cheese

How to prepare

  • Begin by cutting the tomatoes in half and arranging them in a baking dish.
  • Drizzle the tomatoes with oil and sprinkle them with salt and pepper.
  • Toss the tomatoes to ensure an even coating of oil, salt, and pepper.
  • Roast the tomatoes in the oven for approximately 15 to 20 minutes or until they become soft and slightly charred.
  • Once roasted, remove the tomatoes from the oven and allow them to cool down.
  • Next, prepare the seasoning by thoroughly mixing all the spices with the oil.
  • Place the chicken in a bowl and ensure it is evenly coated with the seasoned oil.
  • Grill the chicken for about 4 to 5 minutes on the first side.
  • Flip the chicken over and continue grilling for an additional 2 to 3 minutes or until it is thoroughly cooked.
    Transfer the grilled chicken to a plate and set it aside.
  • To assemble the sandwiches:
    • a. Split the ciabatta rolls.
    • b. Spread pesto on one half of each roll.
    • c. Top the pesto-covered half with the previously cooked tomatoes, grilled chicken, and slices of President cheese.
