Stuffed Pasta Shells with Spinach & Cheddar Cheese

Ingredients

  • Jumbo pasta shells 500 grams
  • Chicken Breasts 3 pcs
  • Chicken Broth 1/2 cup 
  • Parmesan cheese grated 1/4 cup
  • Olive oil 1 tablespoon
  • Onion 1 medium
  • Garlic 3 cloves
  • Frozen chopped spinach 300 Grams
  • Pride Classic Cheddar 2 cups shredded
  • Marinara Sauce
  • Dried oregano 1/2 teaspoon
  • Red chilli flakes 1/4 teaspoon
  • Salt and pepper to taste

How to prepare

  • Preheat oven to 375°F (190°C).
  • Cook pasta shells per package instructions, then drain and rinse with cold water.
  • Heat oil in a skillet, cook chicken seasoned with salt and pepper until done. Remove and shred the chicken.
  • In another skillet, heat olive oil over medium heat. Add onion, cook for 5 minutes until softened. Add garlic, cook for 1 more minute.
  • Stir in spinach, cook until wilted (about 3 minutes), then remove from heat and let it cool slightly.
  • In a large bowl, combine spinach mixture, shredded chicken, cheddar cheese, oregano, red chili flakes, salt, and pepper. Mix well.
  • Fill each pasta shell with the spinach-cheddar mixture.
  • Pour Marinara sauce and place stuffed pasta shells in a baking dish.
  • Add more marinara sauce over the top, then top with Pride cheddar cheese.
  • Cover the baking dish with foil and bake for 20-25 minutes until pasta shells are heated through and sauce is bubbly.
  • Uncover and bake for an additional 5-10 minutes until cheese is melted and golden brown.
  • Let cool slightly before serving.
